Chicken Pita Gyros
  • 1/2 cup lemon juice
  • 1 pound skinless, boneless chicken breasts, sliced in thin strips
  • 1 teaspoon turmeric*
  • 1 cup plain low fat yogurt
  • 1 teaspoon oregano
  • 1 cups thinly sliced cucumber
  • 1/4 teaspoon salt
  • 1/2 cup chopped onion
  • 1/8 teaspoon cardamom*
  • 1/8 teaspoon pepper
  • 1 tablespoon minced garlic
  • 1 1/2 teaspoons olive oil

In a recent issue purchased gyro packages were suggested as a quick meal choice. It was noted by more than one reader that these were hard to find. Try this version prepared in a skillet. The dry blend of spices may be prepared in advance and used on chicken, beef or pork. Remember to slice meat or poultry thinly and allow to marinate.

Nutritional information per serving 237 calories, 9 grams of fat, 1 grams of fiber, 24 grams of protein, 25 grams of carbohydrate. Serves 4


Combine lemon juice, turmeric, oregano, salt, cardamom, pepper, garlic and chicken in ziplock bag. Shake well to coat. Marinate in refrigerator for 8 hours.
Sauté marinated mixture over medium heat until chicken is no longer pink in the middle, about 8-10 minutes. In small bowl stir together cucumber, onion and yogurt. Split pita bread in half, opening as a pocket. Divide chicken pieces evenly into 4 pockets. Top with sauce.

*The investment of these spices will be worth your while. Add cardamom to fruit dishes, cookies and breads. Enhance fish, meat, sauces and rice with turmeric
